We have 300 ppl connected at any given time. But I ended up in Sylph a half-dead, mostly japanese server. So, the right server: I was gonna go to Asura because for a moment i fell for the "largest english speaking" "largest population" trap. You can choose to transfer you character from the official server to ffxi Phantasia server. I know because i did it and people just out of curiosity grabbed the pearls and within a week we were doing Ambu. Signet Boosted with regen, refresh and reraise. Most of the time you'll be doing stuff with your linkshell and you can either find one or make one in any server, you don't even have to work your rear off for that, just drop some pearls at the concierge and within a week or two you'll have half an English speaking LS in a Japanese server.
I've noticed that, whenever the subject comes up, people here make it a big deal having a large English speaking community, but that's useful only if you're the lone wolf or something and you don't have a LS, which is not the best way to approach the game if you ask me. Honestly, i don't think there's something that you'll find in one server that you wouldn't be able to find in another server.
